Thu, 30 October 2008 Jim interviews Jim Corrova of TAT Ristorante. TAT originated both the Poor Boy sandwich and Pizza in Columbus. Pizza can be placed in Columbus in 1929 at TAT Ristorante. TAT served pizza in Flytown, a not so nice name for the part of town for immigrants and African Americans that was between Spruce Street and Buttles Avenue, west of Goodale Park. Flytown was razed in the 1950’s. Pizza was not on the menu at first, but you could order it at TAT Ristorante di Familia. The restaurant has some menus from the 1930’s which do show pizza as a menu item. TAT was named after the new Transcontinental Air Transport company with used Ford Tri Motor planes and passenger trains to transport people from New York to Los Angeles in 48 hours. The first stop on this journey was in Columbus where travelers left a train and traveled to the new Port Columbus airport to begin the air segment of their trip. TAT was new and exciting. Thu, 4 September 2008 The Foodcast crew report from a preview event for the forthcoming 20th annual Taste the Future benefit gala. Not being a native Columbus resident I had never heard of the event, so a bit of research was needed. Taste the Future is an event featuring culinary masterpieces from over 50 of central Ohio’s best establishments. The real stars of this event are the amazing chefs from around the community who show off their remarkable culinary skills to over 1,000 guests. Taste the Future takes place on the downtown campus of Columbus State Community College and all proceeds from the event fund scholarships and special projects. Every year the event helps hundreds of students build their future with a college education. Tuesday, September 16, 2008 5:30 - 9:00PM Downtown Campus, Columbus State Community College Through the course of the interviews, we discovered that this event is heavily tied to the CSCC Hospitality Program. For example, the Hyatt's spread is chosen and prepared by the apprentices with guidance from David Wolf; master and CSCC alum. This allows the guests to have first hand interaction with the result of the scholarship programs that they are helping to fund. The 20 year history of the gala allows us to see some of the people who have come out of the CSCC Hospitality Program and where their careers have gone. We were fortunate enough to talk to 3 such gentlemen: Matt and Charles Langstaff of Bexley Monk and Dave Wolf of Hyatt on Capitol Square Plaza Restaurant. (Note that during the course of the interview that I have a slip of the tongue and say 10 years of Taste of the Future when it should be 20.) Also, we get sidetracked discussing wood ovens again! Their 30th anniversary is this year, so to celebrate they are offering a $19.78 Prime Sirloin Burger. The dish is fitting considering that legend (by legend I mean press release) has it that the co founders started a business in 1978 when Arnie Morton was impressed with Klaus Fritsch's hamburger making skills. $5.00 from each hamburger purchase goes to the Make a Wish Foundation. They are hoping to make 30 wishes come true. Thu, 26 June 2008 In which our hosts have dinner with Colleen, leader and one of the founders of Slow Food Columbus, and husband Bear. Jim also makes approximately 5 puns regarding the fast growth of Slow Food Columbus. Slow Food Columbus' first dinner was called Local and Loving It. It should be noted that not many people know what the hell a spice bush berry is. Luckily Jeni does and made some wonderful ice cream with it. Slow Food Columbus has also done a dinner at Alana's that involved some great food and wine pairings. Alana has always supported local sustainable agriculture whenever possible. The Refectory Dinner was another great Slow Food event where "French Country Met Ohio Countryside". In late May, Slow Food Columbus hosted a micro roasting workshop taught by Bear for fellow coffee enthusiasts. Slow Food Columbus is still growing with plenty of events planned. Mockingbird Meadows Tasting and Tour will occur on July 13th. In August there will be a pig roast. There will be a wine dinner later this year, and in September there will be a dinner at Flying J. This Fall there will be a tea tasting and also a Scotch tasting. There seems to be more vocal proponents of sane eating vs. dieting fads. Loosing weight is easy, but remember that diets end. Once the diet runs it's course we are back to square one and our lifestyle will bring our bodies back to the previous weight. Permanent weight loss requires a lifestyle change. Thu, 15 May 2008 Jim and Zach talk to Dave of Webercam For beginners, Dave recommends Smoky Joe Weber Grill (14.5 inch) Dave, however, uses the 22 inch model. The Kettle Grill has been around since the 1800's. Here is a shot of Dave's indirect heat setup. We're not charcoal snobs. Propane has its place for some of the quicker grill jobs like fish, burgers, and steak. Flank Steak makes for one of the best cheap (frugal) cuts of meat. Here is an example of one of Dave's grill modifications. A good starter project is a whole chicken, brined, and grilled over indirect heat for three-ish hours. Grill vegetarian! Eggplant and zucchini both do very well. Become a Certified BBQ Judge. Here is where Dave goes to research BBQ: 1. Kent passionately suggested Whitestone Windsor Handmade Blue from NZ. Jim finally found this rare cheese at The Epicurian in Queen Victoria Market in Melbourne. Wine regions in Australia: Start with the World Atlas of Wine – 6th edition – available from the Columbus Metro Library. Hunter Valley – Note: 2008 is a bad year for Hunter Valley vintages. The country has been in drought over 5 years but Hunter Valley had too much rain this year so many grapes are rotting on the vine. Jim also hit the Rutherglen Region (Tokays, Muscats, and Durif's) and the Yarra Valley (Home of Yering Station Fortified Shiraz - the greatest red wine ever). We hear about these wine spots too. Wed, 2 April 2008 Ashley from The Columbus Beer Wench joins Jim and Zach to discuss food parties. This episode we cover gatherings that revolve around pizza, hot dogs, chili, and beer tastings. Ashley's General Food Pairing Notes: * When in doubt: pair region with region. Food using ingredients and spices from particular regions of the world typically pair best with the wines of those regions. * Strong flavored food needs strong flavored beers and wines. Both must be able to hold their own, without being overshadowed by the other. * Lighter food goes best with lighter beverages: you never want the beverage to completely overwhelm the taste of the food. And visa versa. Pizza Parties The Gourmand's guide to pizza in Columbus Ashley's Pizza Pairing notes: * Wine and beer pairings differ with the cheese, sauce and topping used. * Chianti is a classic pizza wine. Any red wine from Italy also pairs well. When in doubt: if you are in a mom & pops Italian place - go for a carafe of the house wine. It will go with everything. * The 3 P's: Pale Ale, Peroni, and Porter. Typically, really strong flavors and pungent ingredients pair better with stronger flavored beers such as pale ales and IPAs. More middler flavors and classic topping pairs nicely with lighter beers such as an Italian Peroni Lager. Pizzas with sweeter ingredients such as balsamic onions, sundried tomatoes, and goat cheese may pair nicely with a porter. Hotdog Parties Chicago Dogs Defined Irvings Hot Dogs - Chicago Coney Dog Ashley's Hot Dog Pairing Notes: * It is hard to decide what pairs well with processed meats. I would suggest pairing beverages with toppings. Most hot dog toppings tend to be German in nature (sauerkraut, mustard etc.). This is why I think German beers would compliment hot dogs well. Suggestions: lagers, pilsners, dunkel or a doppelbock is you want something heavier. Chili Parties Ashley's Chili Pairing Notes: * Once again, this all depends on the ingredients and spices used. Chili uses predominately South American spices, so South American wines will pair well. Good countries to look for are Argentina and Chile. Both produce excellent Malbecs, Cabarnets, Chardonnays, Viogniers, and Sauvignon Blancs (sometimes called Chenin Blanc). I find spicy food pairs well with bold, oaky and dry wines. * Chili needs a strong beer that can cut through the heat. Strong, hoppy beers are excellent at doing this. I would suggest going big with an IPA or Doule IPA, but pale ales also work well. Since chili is a South American dish, Mexican beers with a hint of lime will also pair nicely. Music from: R.C.
